Sebby’s Scrolls Has Opened Their Dedicated Cinnamon Scroll And Coffee Window In Caulfield

Thick cream cheese frosting meets a perfectly dense cinnamon-spiced bun in symbiotic perfection—this is the simple yet revolutionary premise of the all-star baked good operation of Sebby's Scrolls

Originating through Instagram DM back in 2020, Sebby's Scrolls has geographically conquered the cafe scene in Melbourne with their shining white cream-topped cinnamon scrolls now gracing cafe display cabinets from Mentone to Collingwood and beyond. 

Led by duo Sebastian Castro and Annabelle Strahan, Sebby's Scrolls has long stood as a purely wholesale operation, but now the team has made the move to dish them out to punters direct alongside takeaway coffee. 

Their baking headquarters is a corner store on North Road in Caulfield South which has had some serious treatment since the team first took over back in early 2021. 

"You should've seen it back then" Seb exclaims while extracting scrolls from the oven. 

Now adorned with a sign-wrapped roof, scroll emblems on the glass and a servery window at the front of the shop, you're met with a long open bench anchored by a coffee machine with Allpress coffee on the right and trays of fresh cinnamon and cheesy vegemite scrolls on the left. 

It's a simple extension of the baking space which still operates behind—step up to the window and order with the backdrop of Sebby and the team busily rolling out and frosting scrolls. 

Open from 7am the Sebby's Scrolls shop will continue to serve scrolls until sold out and then continue to whip out coffees until 2.30pm. 

"We've wanted to do this so long, but we've just been so busy that we haven't had the time," Belle explains. 

With a reduced focus on wholesaling the team has now made way for more scrolls available at the shop, meaning you're getting them straight off the press with the cream cheese frosting being lathered just mere metres from where you order.
