Twenty layers of crepes. No, that’s not a typo. Northbridge’s 20Twenty specialises in mille crepe cakes, stacking delicate crepes with silky cream into impossibly light slices that come in flavours spanning matcha, hojicha, pandan coconut, black sesame and mango coconut. There’s also coffee, Earl Grey and even durian in the mix. Everything is made fresh to order, so give at least two days’ notice if you’re after a whole cake.

Teeter Bakery’s Natasha Brownfield has gone from quietly plotting pastry domination around Perth’s pop-ups to opening a little sunlit bakery of her own. Handmade in Fremantle since 2012, these Czech-inspired beauties are built from delicate layers of honey-infused cake, rolled and stacked by hand into something seriously special. The original is a cult favourite, but the flavour lineup also ventures into pandan coconut, black sesame and Biscoff espresso territory.
