White tablecloths, marble, jacketed wait staff and caviar bumps—Gibney is hands down the fanciest of all the venues under George Kailis' name. And honestly, it might just take the cake for 'most opulent dining destination' in all of Perth. 

With enough room for 160 diners, the 600 square meters of oceanfront hospitality serves unmatched views all the way to Rottnest and super luxe Californian country club vibes courtesy of the multi-million dollar design from Rezen Studio—the local architecture and interior design firm behind fellow stunners like La Lune and Vin Populi. 

Inspired by traditional steakhouses and brasseries throughout Europe, London and New York City, Gibney combines upmarket bistro fare with old-school service. Think: caviar bumps and bubbles (they happen to have the largest Champagne menu in Perth), a cracking bowl of handmade pasta or one of six top-tier steak cuts washed down with a good glass of wine. 

There's also be a dedicated seafood grill section and a crustacean bar. Plus, keep an eye out for the dessert trolley and other tableside serving theatrics (the Gibney Gibson is a must). Dining at Gibney is as much about the experience as it is the food, after all.

Of course, to bring such a grand vision to life, you need an all-star team, and from the sound of their recent team announcement, you're in very safe hands here.

Leading the kitchen, they've appointed Head Chef James Cole-Bowen, whose resume includes the likes of The Corner Dairy, Le Rebelle, Omnia, Bistro (Melb), Lûmé (Melb), New Normal and Restaurant Amuse. He'll be supported by Sous Chef Steven Ellis on the wood grill, who has most recently been firing up the goods at Big Don's Smoked Meat.

London-born Pastry Chef Richard Domer will be taking care of sweets, having most recently worked magic across Cape Arid Room's stunning afternoon tea menu as Head Pastry Chef at COMO The Treasury.

Award-winning Group Sommelier, Nina Throsby, has handpicked Nicole Wewiorski (ex-Meat & Wine Co) to deliver Gibney's first-class wine program. 

And holding it all together will be General Manager Craig Hammond, who comes with some serious premium service experience working in Michelin-starred venues in Aspen, Vegas, London and Provincetown, and personally serving internationally renowned billionaires. Hammond has even attended to immediate members of the British Royal Family such as the late Queen Elizabeth II and reigning King Charles III, so you know his service game is at the absolute highest level.
