Tilda is an effortlessly elegant Sydney CBD restaurant, opening in House Made Hospitality’s dining precinct at Sofitel Sydney Wentworth on Wednesday 9 October.

The menu takes a modern Australian approach highlighting local, seasonal ingredients with a thoughtful, sustainable touch. You’ll want to start with the signature tableside bread and butter service starring AP Bakery’s saltbush focaccia paired with a pile of Pepe Saya butter and seared Jersey milk cheese drizzled with wildflower honey. 

For something light, tilda's raw bar offers dishes like chilled scallops with lemon myrtle and red tail snapper crudo, crab toast with seaweed butter, and Wagyu beef tartare. 

When it comes to mains, think rich, comforting pastas like hearty beef cheek ragu rigatoni and spaghettini with pipis, pancetta and white wine, quality cuts like grass-fed Scotch fillet, and tilda’s surf-and-turf grill with ribeye and lobster. There's also sustainably sourced seafood like line-caught John Dory cooked over charcoal, complemented by house-made sauces like rich roast bone jus that reflects tilda’s low-waste ethos.

Round out your meal with reimagined Aussie desserts like passionfruit yoyos; a neenish tart with Davidson plum; and upside-down pineapple cake soaked in whisky anglaise. 

An extensive beverage program features a wine list with 25 by-the-glass options, and the cocktail lineup focuses on native ingredients, including the must-try tilda martini made with Archie Rose lemon-scented gin, Ferrand orange curacao, pomelo vermouth and eucalyptus bitters.

Blending Australian charm with the sophistication of a New York-style brasserie, tilda offers a warm and inviting space with a custom-fit out by Fender Katsalidis incorporating earthy tones and moody textures, with a 12-person private dining room perfect for any occasion. 

Tilda is one of four House Made Hospitality venues debuting at the Sofitel Sydney Wentworth in October 2024 alongside bar tilda, as well as Vietnamese-French restaurant Delta Rue and breezy terrace bar Wentworth Bar, both opening later in the month.
