Delta Rue is a Vietnamese-French restaurant in the Sydney CBD, on level five of the Sofitel Sydney Wentworth.
Across the large dining room and outdoor terrace, the design evokes the Old Quarter of Hanoi, with a muted wallpaper design covering the restaurant’s entire back wall, striped textiles on the terrace, and French colonial elements like reclaimed teak furniture.
“We’re bringing the lively, fresh flavours of Vietnamese cuisine to the fore, beyond the street food everyone knows,” says House Made Hospitality director Justin Newton.
“When it comes to drinks and desserts, that’s where the French influence really shines, adding a layer of refinement.”
Head chef Phot Arnupapdecha and executive chef Elliott Pinn’s menu plays with Vietnamese culinary traditions, kicking off with customised banh mi served from a trolley wheeled to your table.
Small plates include bánh khọt rice cakes filled with rare breed pork, ginger shallot, and garlic chives; duck spring rolls with a foie gras core; and pipis in lemongrass sate on vermicelli noodles.
Main proteins like roasted duck legs, whole snapper or hoisin-glazed lamb shoulder are served with nuoc cham, rice paper, butter lettuce, and pickles to create perfect hand-held bites. Other larger plates include Hanoi-style roasted John Dory marinated with lemongrass and galangal, and dry-aged filet mignon with shaking beef sauce, bearnaise, and French fries.
The French-influenced desserts include a crème caramel with makrut lime and lemongrass, and mille-feuille with black sesame cream, whipped coconut cream and pineapple ice cream.
From the intimate Champagne bar at the restaurant’s entrance, Delta Rue’s drinks selection also leans French with 70 per cent of the list from France across Champagne, other noted regions, and a range of dessert and fortified wines.
Like desserts, cocktails lean classic with a Vietnamese twist, like a Sidecar blending cognac with house-made mango cordial, lemon and red pepper, or a take on the French 75 with Pommery Champagne, pomelo vermouth, pear eau de vie, and finger lime extract.
Delta Rue joins House Made Hospitality’s three other venues in the Sofitel Sydney Wentworth (Wentworth Bar, tilda and bar tilda) plus nearby spots in Hinchcliff House, Martinez, and Promenade Bondi Beach.
