Japanese dining is synonymous with precision, restraint, and subtle intention—and that’s being taken to a whole other level at West End’s new intimate 12-seat omakase restaurant.

+81 Sushi Kappo is located beside the award-winning Aizome Bar and will see Tokyo-trained chef Ikuo Kobayashi hone his experience from one of Japan’s most prestigious Michelin-starred sushi restaurants, Kyubey, into a truly refined offering.

‘Kappo’ means to cut and to cook, and this emphasis on the craft behind Japanese cuisine is the epitome of Sushi Kappo with each course prepared at the counter to showcase the delicate balance between seasonality, texture and form. Leaning on regional techniques Chef Kobayashi has gathered from pilgrimages across Japan, you can expect Edomae-style sushi to be in the spotlight and enhanced with understated elegance.

The multi-course seafood-focussed omakase features Kobayashi’s signature sushi shari enriched with spirulina sourced exclusively from Iceland. This will be complemented by what’s available in local micro-seasons and specialty ingredients from Japan. Naturally, a dining experience this impeccable will set you back a pretty penny, and Sushi Kappo’s deeply personal menu is no exception—starting from $450 per guest.

Alongside the omakase, you can expect a carefully considered beverage program with the likes of a 100-reference artisanal sake, premium and rare Japanese whisky, champagne, and wines from off-shore and on-. There will also be three rotating beverage pairings to mirror the progression of the kappo menu, and you’re invited to relax in the adjoining lounge post-omakase for Japanese whisky, liqueurs and to reminisce on the connection made between chef and guest.
