Think—truffle wagyu tartare with 63 degree egg and ao nori, tempura scampi with ume shiso amazu, spicy Queensland spanner crab with crispy rice and miso-glazed glacier 51 toothfish with pickled cucumber. Yeah, it’s basically artwork on a plate and it’s a quick way to get in Mum’s good books for the next year.
