  • The Best Specialty Coffee and Roaster In Sydney

There are few rituals more sacred (or secretly validating) than stepping up to the bar at your neighbourhood coffee spot, exchanging a few words with a barista who knows your order, and heading into your day knowing—smugly, perhaps—that you’ve got the routine down pat.

And while everyone has their own bickerings about where Sydney’s best brew actually lives, a few local names have now landed on the inaugural World’s 100 Best Coffee Shops list—so you can take at least some of the guesswork out of your morning order. Toby's Estate was crowned the world’s best last year (before slipping to fifth in 2026), while local heavyweights like Only Coffee Project and Single O are only further cementing Sydney’s place on the global coffee map. In other words, the long-running Sydney versus Melbourne debate is looking a little less… contested.

But anyone who drinks coffee in this city already knew that.

Because Sydney’s best specialty coffee shops and roasteries have never been just about a morning boost. They’re neighbourhood institutions tucked into backstreets, warehouses and converted terraces, where obsessive roasting, meticulous brewing and genuinely warm hospitality all work together to fuel the city. Some are pioneering names that helped shape Australia’s third-wave coffee culture; others are pushing things forward with experimental single origins, rare beans and baristas who treat extraction like an art form.

So whether you’re chasing a near-perfect pour-over, a silky house blend or plotting your next caffeine crawl, we’ve rounded up the Sydney coffee spots worth knowing—because when the city is officially serving some of the best coffee on Earth, it makes sense to drink accordingly.

The Best Coffee In Sydney CBD

Toby's Estate Coffee Roasters

32-36 City Road, Chippendale

If there’s a place that helped turn coffee drinking into a full-blown spectator sport, it’s Toby’s Estate’s Chippendale flagship. Part café, part roastery, part coffee playground, this is where you come when you want to geek out a little. The island brew bar puts the baristas front and centre, the glass-walled roastery lets you watch the magic happen, and there’s always something rare, rotating or experimental pouring.

Yes, the house brews are excellent, but what really sets Toby’s apart is how deep you can go. Monthly single-origin rotations, limited-edition Flavour Savour blends and a frozen menu showcasing competition-level coffees mean there’s usually something here you haven’t tried before.

For all its global acclaim, it still carries that distinctly Sydney blend of precision and ease—serious about coffee, never stuffy about it. There’s a reason it topped the world rankings, then held strong in the global top five.

Insider Intel
  • Pull up at the island brew bar if you want to chat beans with the team
  • If you’re coffee-curious, this is one of the best places in Sydney to try a filter flight

Blending Japanese and Scandi style in a charcoal-toned space with a sunken dining area, Edition Roasters' Darling Square location is one of the most beautiful cafes in Sydney.

As one of Sydney's best specialty roasters, Edition serves exclusively single-origin coffee, brewed up using methods including batch brew, pour over, Aeropress, and cold brew, while the food menu swings Japanese with salmon ochazuke, souffle pancakes topped with white chocolate mousse, and karaage chicken donburi.

  • Coffee and matcha are also available from their venues in Wynyard, World Square and Mid-City.

Outta Coffee

A true hole-in-the-wall (albeit one with a few coveted seats) Outta Coffee punches wildly above its size. Tucked down Valentine Street in Haymarket, this sleek little spot has become something of a cult favourite for people who like their coffee dialled in and, yes, their matcha taken seriously.

Coffee here centres around showcasing microroasters from around the world, so there’s usually something new to discover in the hopper and often a little education folded into the experience. Connected to a streetwear store and carrying that cool, compact Haymarket energy, Outta feels like one of those places you discover once and immediately start recommending.

Insider Intel
  • Don’t leave without trying the matcha, even if you came for coffee

The Best Coffee In Sydney's East

Beta Coffee

76 Devonshire Street, Surry Hills

Beta CoffeeImage credit: Beta Coffee | Instagram

For a coffee shop that only just cracked the global rankings, Beta has been garnering serious chatter among Sydney coffee obsessives for a while. Landing at number 13 in this year’s World’s 100 Best Coffee Shops—ahead of plenty of bigger, more established names—it’s proof that meticulous craft and a fiercely loyal following can carry serious cred.

There’s an almost radical approach at play here. Beta is interested in where specialty coffee goes next, using technology and innovation to challenge traditional service models while freeing up baristas to focus on what matters: better brews and more meaningful hospitality.

And then there’s the coffee. Precise, expressive and beautifully consistent, with an attention to detail you'll clock immediately purists. This is a place where experimentation never comes at the expense of quality. For a venue so focused on the future, it has all the hallmarks of a Sydney institution.

Insider Intel
  • A must for anyone interested in where Sydney’s ultra-specialty scene is heading
  • Come for a quick coffee, and you may well leave rethinking how a café can operate

Single O

60/64 Reservoir Street, Surry Hills

Few names carry as much weight in Sydney coffee as Single O. Pouring since 2003, these guys have long been a roasting institution—helping shape the city’s specialty coffee culture while proving great coffee and strong ethics can go hand in hand.

There’s always been a conscience behind the craft here, with a serious commitment to Fair Trade sourcing, sustainability and doing things properly. But what’s kept Single O at the front of the pack is that it never feels worthy or self-serious. Case in point: the self-serve batch brew taps dispensing rotating single origins (a bit of a pilgrimage moment for black coffee devotees) or a solar-powered roastery and long-running efforts to meaningfully cut waste.

Insider Intel
  • Head straight for the self-serve batch brew taps if you’re usually a long black drinker

Run by coffee maestros Dan and Shoji, Artificer strips things back to basic. You won't find sprawling brunch menu, novelty drinks, or overworked coffee theatrics. This is a spot for people who want to pay attention to what’s in the cup, whether that’s a beautifully dialled-in espresso or a seasonal filter with layers the baristas are more than happy to talk you through. There’s a reason Artificer has long held cult status in Sydney’s specialty scene.

Potts Point has no shortage of good cafés, but Primary Coffee Roasters is definitely up there on the list. Opened by Dan Kim in 2017 with coffee as the singular pursuit, it’s built a reputation as one of Sydney’s most respected spots for a seriously good cup.

A few pastries at the counter, a compact setup, baristas who know their stuff, and smooth single-origin pours take the floor here. Grab a seat outside under the umbrellas and you’ve got some of the city’s finest people-watching, with stylish Potts Point locals (and their equally chic dogs) drifting by.

The Best Coffee In Sydney's Inner and Far West
Sample Coffee

Various Locations

Sample CoffeeImage credit: Sample Coffee | Instagram

Founded in 2011, Sample has long been a favourite among Sydney’s serious coffee drinkers, built around small-batch roasting, transparency and the idea that exceptional coffee should still feel approachable. Across Marrickville, St Peters and Surry Hills, that ethos carries through—whether you’re dropping in for a silky espresso, stocking up on beans or hovering over brew gear you absolutely do not need but suddenly want.

The St Peters Pro Shop, home to a 1957 roaster, is something of a pilgrimage site, while the broader Sample universe has a way of pulling in everyone from first-time filter drinkers to full-blown coffee obsessives. There’s always a thoughtful rotation pouring, a barista happy to talk origin and process, and a sense that coffee here is as much about curiosity as routine.

And while the coffee is the obvious draw, the food and atmosphere make it easy to linger—pastries, fortnightly-changing sandwiches, house-made sodas and that unfussy inner-city energy.

Insider Intel
  • Ask what single origins are on rotation—there’s almost always something unexpected pouring
  • One of the best places in Sydney to dip a toe into filter coffee if you’re usually an espresso person

At Matinee, the show starts early and coffee takes centre stage. This stylish Marrickville roastery-café has become an Inner West favourite for good reason, pairing seriously good coffee with the kind of food offering that makes a casual breakfast turn into a long lunch.

Roasted on-site, the coffee is the anchor: single origins, blends and decaf all treated with equal care, and you’re very likely to leave with a bag of beans tucked under your arm. With its airy 80-seat space, dog-friendly energy and all-day hum, Matinee feels like the kind of place people come for coffee and end up building a routine around.

Coffee snobs, this one’s for you. Tucked into Marrickville, Double Tap is a boutique micro-roastery with a big reputation among Inner West coffee devotees, pouring some of the best espresso in the neighbourhood—if not the city. The setup is compact, but that’s very much part of its charm. Expect beautifully pulled espresso, thoughtful roasts and a level of consistency that keeps people coming back.

While coffee is clearly the headline, there’s enough on the food front to turn a quick stop into a long lunch—homemade pastries, a tidy edit of sandwiches, wraps and bowls that keep things simple but satisfying. Grab a seat out front, sip something silky and settle into a little Marrickville street theatre.

Insider Intel
  • Order espresso if you want to taste what Double Tap does best
  • Outdoor seats are prime people-watching territory

Circa Espresso

21 Wentworth Street, Parramatta

Inspired by Melbourne’s laneway cafes, Circa fits all its charm down a little hallway on Wentworth Street. But don’t let its small size fool you—this place pumps out a banging breakfast and incredible coffee.

The ottoman eggs are a Circa signature (that you’ll be thinking ‘bout days later), crafted with poached free-range eggs, crumbed eggplant, creamy garlic labne, fried leeks, and fluffy focaccia drenched in burnt chilli and sage butter. It’s joined by rotating seasonal dishes, like maple-glazed pancakes and portobello mushroom toast.

Only Coffee ProjectImage credit: Only Coffee Project | Instagram

Only Coffee Project has built a global reputation through a purist approach to brewing—earning a top-five placement in this year’s World’s 100 Best Coffee Shops and cementing itself as one of Sydney’s true coffee heavyweights.

This is where you come for rare beans from world-class roasters, experimental lots and some of the most precise brewing in the city. Pourovers arrive in sensory cups, batch brews are treated with near-ceremonial care, and even extras like mineralised water or freeze-distilled milk.

There may only be a few seats and a pastry or two (often from Luke Avenue) but that feels beside the point. This place is about coffee as craft, experiment and conversation—and yes, they’ll make you a brilliant flat white too.

Insider Intel
  • Go for a pourover if you want the full Only Coffee Project experience
  • Ask about rare or experimental beans—this is where the fun begins

Skittle Lane Roastery & Coffee Bar is the second Northern Beaches outpost from espresso-obsessed legends Jodie Foster and Dean Wooding, located in Brookvale's industrial backstreets.

Spread across two warehouses, the cool walk-in coffee bar, roastery and retail space offers a behind-the-scenes glimpse into the brewing process, with a rotating roster of single-origin coffees available as espresso, batch brew, or pour-over. A significant staple on the lineup is Skittle Lane’s House Espresso, a buttery, full-bodied sip sourced from La Falda farm in Huila, Colombia.

“Over the years, we’ve built great relationships with our green bean importers—they’re people we trust and respect,” says Dean. “Because of that, we know exactly where our coffee comes from and the story behind it.”
