Time to suit up, Perth, because the legends at Jim Beam are in town and we’re donning our finest for a sophisticated soiree of smoke, spice, Southern soul and Australian swagger.

For one night only, the ever-dapper W Churchill is trading its pastas and parmies for bourbon, barbecue and black-tie attire to celebrate the launch of Jim Beam Black 7-Year-Old Bourbon Whiskey—the smooth new drop that’s spent seven patient years perfecting in the barrel.

But this isn’t your average snazzy supper; it’s a full-blown assault of the senses.

For a start, the menu reads like a meat-lover’s fever dream. We’re talking elevated house-ground cheeseburger sliders made with marbled Aussie beef, charred lamb backstrap on carrot, dill and cumin purée, 12-hour slow-cooked brisket that barely holds itself together, spicy fried chicken dripping in a smoky bourbon honey and harissa-spiked Merguez lamb snags that bring a hit of heat. On the side, you’ll find truffle mac and cheese, golden cornbread and Vegemite-infused, charred brussel sprouts, plus a rich choccy brownie to finish.

And because it wouldn’t be a Jim Beam BBQ without a bit of bourbon, premium Jim Beam Black will be served neat, with bitters and ginger, or shaken into a selection of specially crafted cocktails, with a guided tasting to get you well acquainted with the new nip.

Then there’s the atmosphere. You’ll catch the sweet scent of oak and vanilla in the air, the hum of a live bluegrass band, and the glow and crackle from open flames, casting a glow around the room. Every sound, scent and sight has been carefully orchestrated to showcase the depth, richness and refinement of this extra-aged spirit.
