We here at The Urban List love a good smoothie, and while we’ve already found Auckland’s best superfood smoothies, sometimes it’s nice to just make your own.
Chocolate Lamington Smoothie
Ingredients:
1 cup coconut milk (we used Little Island!)
1/2 cup LSA (or oats)
1/2 cup shredded coconut (plus a sprinkling to garnish)
4-6 pitted medjool dates
3-4 tsp cocoa powder
1 tsp vanilla
4 ice cubes
1 tsp cacao nibs (optional to garnish, with a sprinkling of shredded coconut or dark chocolate)
Method:
Blend in your NutriBullet.
Pour into mason jar or chilled tall glass (try dipping rim of glass in coconut milk then in dessicated coconut—making it look like a pimp’n cocktail).
Garnish with shredded coconut and cacao nibs or shavings of dark chocolate.
