The cocktail degustation at 1806 starts with a palate cleansing drink of Aperol, Cape Mentelle sauvignon blanc semillon, Fever Tree soda water and rosewater, served alongside an incredible spread of bread and dips. Entrees are lighter, featuring seafood and usually gin as an accompaniment. In this case, 1806 will expertly blend Tanqueray gin with Lillet Blanc, Massenez Curacao, Lemon Juice and, the kicker, Absinthe to create a drink that will wow the socks off you and leave you in no doubt as to why 1806 are one of the Melbourne’s best bars.
