Sokyo Ramen Pops-up At The Star

ICYMI, Chase Kojima AKA Sokyo’s Executive Chef AKA one of Sydney’s best Japanese restaurants, has launched a pop-up ramen joint and it’s completely blowing up on Instagram. Since launching last Thursday, over a thousand bowls of Sokyo Ramen's noodly, soupy goodness have found their way into the stomachs and onto Instagram feeds Sydneywide.

There are four kinds of ramen on the menu at this hole-in-the-wall set up which include tonkotsu ramen (the most popular), spicy ramen, a special yuzu ramen and classic shoyu ramen. Alongside these bad boys, you can pick up some Japanese streetfood dishes like chicken karaage with spicy mayo, yuzu sorbet, and mixed greens with yuzu dressing. 

Sokyo Executive Chef, Chase Kojima said, “I’m really excited to take over The Star’s pop-up space in Café Court to launch Sokyo Ramen and serve authentic bowls of ramen for lunch and dinner throughout spring.
 
“Ramen noodles are one of my all-time favourite Japanese street foods and Sokyo Ramen is a great chance to do something different and give Sydney a taste of Sokyo like they’ve never tasted before.”

With over 300 eggs hand-peeled and 80kg of pork cheeks trimmed per day, plus specially printed sheets of nori (seaweed), there’s a lot of hard work that goes into each bowl of ramen. Chase Kojima remarked on Instagram that he “didn’t think it was going to be this crazy”, but it just goes to show how much Sydney loves a good bowl of ramen.

Could the popularity of Sokyo Ramen signify a more permanent restaurant in the works? We can only hope.
