Chia Pudding Recipe

The other day, we wandered into Signed & Numbered on Greville Street to peruse the latest selection of pretty piccies. While we didn't leave with any artwork (this time!), we did pick up this super-cute and super-yum Chia Pudding recipe from owner, Jacqui.

We whipped up this healthy little beauty on the weekend and she came up a treat! Let us know what you think . . .

CHIA SEED PUDDING:

•    2 cups of coconut milk (or other milk, like almond or soy)
•    1/2 cup chia seeds
•    2-3 tablespoons cocoa powder, or to taste (optional)
•    1 teaspoon vanilla (or to taste)
•    1 tablespoon or more sweetener of choice (optional). We use honey or a few drops of stevia.

Put in a blender and blend until smooth. Place in airtight container in the fridge. The pudding will thicken in about 10 minutes.

There are endless flavour variations. You can omit the cocoa powder and vanilla, and add a cup of strawberries for a strawberry version, or add cinnamon and nutmeg for a Chai Chia Pudding.
