If you've been missing Goody Two's pork and kimchi dumplings lately, you're not alone. That's why we asked chef Scott Bridger to share his recipe and he very kindly obliged.

It turns out, dumplings aren't scary or hard to make at all, so have a crack.

Dumpling Filling

  • 250g minced pork
  • 100g kimchi, drained and chopped
  • 2 spring onions, thinly sliced
  • 1 tbsp Shiro miso paste
  • 1 tbsp soy sauce
  • 1 egg white

  • 25 wonton wrappers
  • 1 egg white

To serve

  • Lao gan ma chilli paste and oil (the Black Bean one our favourite)
  • Chinese black vinegar
  • Chopped spring onion

  1. Place all filling ingredients in a bowl and mix well, refrigerate for one hour before using.
  2. Whisk the egg white in a small bowl.
  3. Place five dumpling wrappers on a clean dry bench,
  4. Place two teaspoons of dumpling filling in the centre of each dumpling wrapper and brush with a pastry brush around the wrapper. Fold the sides up to meet and press so there are no gaps.
  5. Place into a bamboo steamer and steam for five minutes on medium heat.
  6. To serve, place five to six dumplings in a bowl and spoon over a little Lao Gan Ma chilli paste and the oil, lightly dress with a little black vinegar and top with the chopped spring onion.
