We Checked Out Sydney’s Newest Rooftop Bar

Nothing screams summer in Sydney like a rooftop bar.  So you can imagine our excitement when we heard a new one was opening (hint: huge), and we were pretty much lined up at the front door.  Standard.

Tucked away in the CBD, Paragon Hotel has been around for a long time. Recently renovated to bring us (and you, obvs) a shiny, new rooftop, it’s the perfect place for after work bevs or a laid-back Sunday sesh with your whole squad.

From the team behind Taylors, these guys know what they’re doing. With a huge disco ball hanging from the open-air roof, city views and tropical beats on the go 24/7, the moment you walk in you won’t want to leave.

The cocktail menu has all your faves (think margaritas, espresso martinis and daiquiris), but the house cocktails are what you’re really here to wrap your lips around.  It doesn’t get much more refreshing than the Getting Jiggy With It (with vodka, Pomme Verte, lime juice, apple juice and fresh watermelon), did someone say summer? When it comes to our fave that honour goes to Dr Jones. The perfect combo of fresh raspberries, Chambord and vodka as well as lemon and pineapple juice, you’re going to want at least three.

The best part? The food options are endless for when hanger strikes. From share plates and burgers, to wood fired pizzas and classic pub grub, there’s something for everyone. We took on all things smoked and fired including the damn delicious slow cooked beef short rib and melt in your mouth pork belly, but if you aren’t keen for sharesies, do yourself a favour and opt for the steak. Served to perfection with smashed green salsa and hot AF chips, it’s one of the tastiest, juiciest pieces of meat in Sydney.  Yes, we just said that.

With ice-cold cocktails, all your fave eats and skyscraper views, believe us when we say that Paragon Hotel belongs at the top of your Sydney hit list.
