Gluten-Free Chocolate Banana Muffins Recipe

It's always a surprise when a little play in the kitchen results in something fabulous. That's just what happened when I decided to bake 'healthy', gluten-free muffins—so I feel honoured to be able to share this recipe with you. These muffins are quick, simple and oozing with melted chocolate—great for that midday energy fix!

Ingredients
60g butter
1 cup all-purpose, gluten-free, self-raising flour (can substitute for almond meal or buckwheat flour)
1/2 cup of toasted hazelnuts or walnuts
1/2 cup flaxseed
1/2 cup rice milk (soy or almond milk would also work)
2 large eggs
2-3 ripe bananas, mashed
1 cup dark chocolate pieces, finely chopped

Method
*Preheat oven to 180 degrees.
*Grease a muffin tin or line with baking cups.
*In a large mixing bowl, whisk the dry ingredients together.
*Make a dip in the centre of the bowl and add the eggs, milk, butter and mashed banana.
*Stir in the chocolate pieces.
*Divide batter evenly between the baking cups, filling each approximately ¾ full.
*Bake for about 20 minutes, or until a toothpick comes out clean from the centre.
