We Made That | Belleville’s Crispy Vegan Fried Chicken

The ultimate comfort food: fried chicken. We live for that audible ‘crunch’ when your teeth clamp down on that crispy, tender fillet and you emit an involuntary groan of pleasure (okay, we'll stop there—this is getting NSFW). 

Usually this level of happiness is reserved for carnivores. But we've got good news, hangry little herbivores– we're here with Belleville's KILLER Vegan Fried Chicken recipe. A signature recipe from Executive Chef Jarrod Moore. Guaranteed to taste as good as the real stuff.

Ingredients

  • 1 Vegan 'Mock' Chicken, chopped into bite-sized pieces (you can get these from most good vegan groceries) 

Flour Mix

  • 90g finely ground fried garlic (WARNING: definitely not first date material)

  • 90g finely ground fried shallots

  • 500g potato starch

  • 500g rice flour

  • 500g tapioca starch

  • 200g cornstarch

  • 1.25 Tbsp ground white pepper

  • 1.25 Tbsp caster sugar

  • 1.25 Tbsp ground coriander

  • 1.25 tsp ground chilli powder (for that mind-blowing kick)

Batter

  • 4 cups water #cleanse

  • 2 Tbsp American mustard

  • 1.5 cups plain flour

  • 2 tsp smoked paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

Method

  1. Grab yourself a big ol' bowl and throw in all the flour mix ingredients, giving it a bit of a stir. Chuck it aside for now.

  2. Now for the batter. Don’t go and use that flour bowl of yours—whip out a new bowl and your trusty whisk. Pour in the water and mustard then give it a good mixaroo.

  3. Take your flour, paprika, onion and garlic powder mix. Channel your Sunday pancakes routine and make a well in the middle of the mixture.

  4. Slowly pour in the water and mustard concoction, then whisk away guuuurl. Beat that batter till it’s as thick as your personality. It should look like pouring cream. 

  5. Dip your faux-chicky bites first into the batter, then into the flour mix, then transfer to wire racks. Leave them dripping there for 10 minutes before frying for 8 minutes in 180-degree vegetable oil (surely contributes to your 7 daily serves of veg).

  6. Belleville tosses their fried chicken in a signature 'Soldier Boy Spice Mix' to finish, but feel free to dust with whatever you've got in the cupboard. Paprika or chilli powder works well (cinnamon not so much). Dip into some vegan hot sauce… ca-pow!
