Boutique spirits seem to be having a moment in Sydney. As well as the local distilleries shaking up complex and limited-edition batches of gin, whisky and vodka—we’re loving bars dishing out fancy imported bourbons and smoky mezcal cocktails.
Now, the brilliant minds behind the bar at Tandem in Newtown have revealed a full aquavit menu, packed with various aquavit styles and specially crafted cocktails.
Tandem is inspired by life and good hospitality in Copenhagen, so it’s only natural that owner and bar manager Peter Lynn get creative with a spirit known in Scandinavia as “the water of life.”
Like gin’s distinct juniper forward taste, “aquavit relies on carraway, with flavours like dill, anise, cardamom often playing a supporting role in the flavour profile of the spirit,” explains Lynn.
“The big difference with gin however is how broad the types of aquavit can be. One aquavit might be clear like gin with its strong botanical flavours coming forward, while the next might be barrel aged at sea, giving it a mellowed out taste like that of whisky.” Yes, you read correctly. As for what to expect on Tandem’s new aquavit menu, try the tasting flight to get acquainted with the spirits' truly intricate flavour profile, try an aquavit martini with dill and orange bitters, or the Copenhagen sprits with aquavit, earl grey oleo and soda.
As for Lynn’s personal favourite? He suggests the Frozen Fjord. “This cocktail carries a subtle smokiness from the mezcal, and balances it with the herbal notes of the aquavit and sourness of the grapefruit.”
