Consider yourself a foodie? If you’re yet to trek to Surfers Paradise to test-drive QT Gold Coast’s funky new izakaya, Yamagen, well folks, what have you been doing with your life? Nothing worthwhile, apparently!
Seriously though, the intricate and innovative dishes being served are already the talk of the town. Though you will not believe your eyes at the masterpiece creations recently added to the menu by Yamagen’s new brilliantly-talented Executive Chef, Adam Lane. If you’re a Japanese cuisine connoisseur, chances are you’ll already recognise the face.
Adam learnt his craft direct at the hands of some of the world’s most admired Japanese chefs—namely Tetsuya Wakada of Tetsuya and Nobu Matshisa of Nobu. Together with a resume that lists Sydney’s Sake and London’s Nahm among previous assignments, it’s little wonder Yamagen are chuffed as punch to have Adam onboard to take the reigns and guide this izakaya to the next level (if that were even possible).
Making art out of raw fish and traditional Asian ingredients, Adam is one man who knows his way around a sharp knife. Working alongside Yamagen’s passionate team, several of whom are like part of the furniture, having worked in the space since the early days (we’re talking 20-plus years), they’ve managed to one-up a menu that many are already boasting to be one of the most imaginative on the Gold Coast, if not all of Queensland.
And we’re calling it now. New on the Yamagen menu is our bucket list dish of 2017. We’ve eaten and photographed a lot of stellar dishes in our time at The Urban List and this, friends, is what your foodie dreams are made of. Think: thin slices of snapper, drizzled with truffled tosazu and delicately decorated with shio kombu, umeboshi and yuzu seasame. Huh? You may not recognise half the ingredients, but trust us, not only is it a work of art on a plate, it is melt-in-your mouth magnificent.
Add to that Hokkaido scallops (also Insta-worthy) or Sakura smoked ocean trout, and you’ve got sufficient reason to gather your fellow foodie fanatics and secure a table for a dinner date with Adam.
