We know the inventor of the light bulb, the telephone and the aeroplane, but how is it possible that we do not know the name behind the greatest invention ever known to man—cheese?

An injustice greater than Donald Trump becoming president, the wo/man responsible for the most delicious food group in the universe surely deserves better, so we've rounded up 15 of Perth's best cheese dishes as a very small way of saying thank you.

Cheese Bul Dak | Restaurant Gangnam

Imagine a BBQ chicken pizza without the base, covered in chilli, served on a bed of onions on a sizzling hot plate and topped with loads of melted mozzarella. So much cheesy goodness to be had at Restaurant Gangnam!

Truffle Fries | The Chippery & Co

Truffle fries coated in PARMESAN CHEESE topped with mayo and truffle shavings?!? Yes, these are possibly the best fries we've ever tasted. If you're not a fan of truffle you can always go The Chippery's cheesy fries.

Soufflé | P'tite Ardois Bistro

The soufflé aux trois fromages et sa ratatouille (also known as cheese soufflé with ratatouillie and basil oil) from P'tite Ardois is a must try for French food fans.

Grilled Halloumi | Filos & Yiros

When you're craving cheese there's nothing better than straight-up grilled halloumi, especially when it's from Filos & Yiros in Northbridge. Squeaky, cheesy goodness!

The Scooby Doo | Frank'd Hot Dogs

Cheddar, brie and freshly grated parmesan. You cannot possibly dissa-brie that this hotdog from Frank'd is the bomb!

Goats Halloumi & Burrata | Bib & Tucker

Our fave North Freo hangout, Bib & Tucker serve not one but two winning cheese dishes. The salt baked beetroot, goats halloumi and spiced sunflower seed vinaigrette is ace, and so too is the burrata with sweet and sour heirloom tomatoes, basil oil and tomato lavosh.

Burrata | Arthouse Dine

We love a good Italian cheese and the confit garlic burrata from Arthouse Dine is no exception—served with glazed beetroot and wood sorrel.

Mac & Cheese | Side Door BBQ

If you're going to order any of the sides at Side Door BBQ (and you definitely should) it has to be the Mac & Cheese. It's a melty, cheesy, carby mess that's so moorish you'll devour every last bite.

Buffalo Mozzarella | Odyssea

Like all things at Odyssea, the roasted buffalo mozzarella, Prosciutto di Parma, charred ciabatta, wild rocket share plate is a thing of beauty.

Halloumi Burger | Garden Cafe On Guildford

Grilled halloumi and eggplant, onion jam, tomato and harissa mayo all with a side of the crunchiest sweet potato fries you're likely to ever eat. Cheese dreams are made of these.

Kimchi & Cheese Toastie | Flo Espresso

I've mentioned it before and I'll mention it a thousand times more, the kimchi and cheese toastie from Flo in Northbridge is LIFE.

Croquettes | Pinchos

There's three balls of cheesy goodness up for grabs at Pinchos, but our favourite would have to be the chorizo and morcilla with paprika aioli.

Whipped Feta | Lalla Rookh

There's nothing betta than the whipped feta from Lalla Rookh, served with peas, broad beans and seeded grissini.

The BIG Cheese | Mack Daddy's New York Slice

How could we leave this glorious New York-style pizza off the list? 16 or 22 inches of grande mozzarella, ricotta, blue cheese and romano heaven!

Lemon & Saffron Cheesecake | The Globe

If you're after a sweet cheese chaser, The Globe have you sorted with their lemon and saffron cheesecake. It's so good it can convert cheesecake haters to lovers in just one bite.
