The official season of hot cross buns is here and with it, a band of unholy Easter creations and hot cross bun mashups. And yes, even in spite of the COVID-19 crisis, these treats are rolling in—because we just couldn’t do without ‘em.
This year’s stand out so far has to be from Clovelly’s Madame & Yves. Headed by pastry chef extraordinaire Yves Scherrer (coach of the 2019 Australian team in the World Pastry Cup), this joint is famous for creating sustainably-centred treats, made with only natural ingredients and no additives. Regulars on the menu include almond and raspberry croissants, piña colada tarts, lemon meringue tarts and some of Sydney’s most delicious eclairs.
Now, for Easter, Madame & Yves is gifting you a giant hot cross bun-inspired eclair—something they’ve dubbed the “hot cross eclairzilla”. This mega treat will mimic the flavours of the iconic hot cross bun. Think a 40cm eclair made from choux pastry and a burnt butter-cream, and fashioned into a hot cross bun "baguette" that's filled with raisins, apricots, cranberries and candied oranges.
The whole eclair gets dipped in a syrup made of cinnamon, cardamom, orange and vanilla, before it’s topped with a spiced mascarpone whipped cream and loaded with more sultanas and candied oranges.
The hot cross bun “eclairzilla” will only be available on weekends and, due to the current COVID-crisis, you can either order online and schedule a pick-up, or have your treat home-delivered (provided you live within a 2.5km radius from the store).
