An après-ski bar in sub-tropical Brisbane?
No, you haven't crossed in to a parallel universe where it actually snows during Queensland's winter.
The Chalet Bar is a new Brisbane bar offering from the folks over at The Alliance Hotel — already home to some damn good food and drink — who have decided it's not fair that only places with snow get to have the chalet bar style fun that comes after a run down the slopes.
With an entry down the side of the The Alliance Hotel in the converted cellar off Boundary Street, The Chalet Bar features some cheeky references to alpine bars; wooden skis hang from the wall, candle light flickers off the exposed brick walls, the comfortable Chesterfield lounges beckon, and the cosy fireplace is just the thing for a chilly winter night.
Add to that The Alliance Hotel's signature flair when it comes to the food and drink, and you have all the makings of a very good night out, ski slopes or not.

Which you should be excited about, because the food at this renowned gastro pub is delish.
Our favourites from the menu are the chilli beef empanada, the panko-crumbed fetta stuffed olives, and the pulled pork burger with coleslaw and homemade BBQ sauce. But, really, it's hard to go wrong at this cracking new Brisbane bar.
The tipples are suitably chalet-appropriate: around 20 varieties of schnapps, cocktails like the Sazerac and Old Fashion (using Ron Zacapa rum); an artfully selected list of wines, beers and ciders; and the surefire winter-warmer — the absinthe fountain.
Apparently, the first owner of The Alliance Hotel — a French man with a penchant for the heavy hitting green liquid — was the first to bring absinthe to our golden shores. So, to honour this industrious individual, The Alliance Hotel are serving absinthe by the cup load. We likey.
