Hola muchachos y muchachas, it’s time to grab those hungry bellies and gather round, because we have something preeeeetty important to tell you. When it comes to authentic Mexican food and, more importantly, Mexican booze, your life has been a lie.
Luckily for you though, the kind folk over at Los Vida are here to help you up your tequila and mezcal game with their easy to follow tips on Mexican feasting so that the next time when only Mexican food will do, you’ll be eating and drinking, like a true hombre. Salud!
A Mexican feast must start with a plate of guacamole and, if done right, it’s finished with some pomegranate (we’re serious) and a side of pescadillas—think tiny corn-cased morsels of goodness filled with mackerel, capers and ancho sauce washed back with a beer and sipping a tequila or even a mezcal.
At Los Vida their tequila and mezcal sommelier (yes, you can be an expert in tequila) will take you through their extensive offering of export drops that go perfectly with your orange wedge. Hold up, say what now, an orange wedge? Yes guys, an orange wedge sprinkled with cinnamon will turn everything you’d normally expect from a shot of tequila officially on its head. The trick with this one is to slowly sip the tequila to savour the flavour, sucking on the orange so there’s no burn. See, we told you you’ve been doing it wrong, soz.
Your second course comes paired with the Classico Margarita, a mix of tequila blanco, (or add a bit of smokiness and swap your tequila for mescal), Cointreau and lime—it’s one of Sydney’s best. We say one of because Los Vida has six margaritas on offer and, don’t worry, there’s more on the way. The citrus flavours in the Classico are complemented by the citrus flavours in the tuna ceviche, with clamato infused tapioca, cucumber, chives, avocado and pistachios. Throw in a salad and you’re good to go. And yes, Mexicans eat salad. We’re not talking shredded lettuce and sad tomatoes, but rather the likes of grilled corn and black bean or quinoa, broccoli and kale.
Yes, finally… Tacos! If you’re the kind, like us, that firmly believe you can never have enough tacos, you’ve come to the right place. There are ten types to choose from, including the Los Vida famous fish tacos of beer battered barramundi (drool), zesty lime, cabbage slaw and not one, but three, types of jalapenos and chipotle mayo. There’s also the beef short ribs taco with mole (that’s a sauce made out of chocolate, nuts and spices), cos lettuce, capsicum and crunchy sweet potato. For your vegan amigos there’s an ancho lentil and plantain (banana) taco too. All the tacos go down a treat with the salted watermelon margarita of tequila blanco, Aperol, fino sherry, watermelon, lemon, sugar and bitters, you’ll wonder how you lived without it.
Sharing is caring when it comes to doing mains Mexican style and they go perfectly with the manliest margarita of them all, the Tommy’s. This rustic beverage combines three key ingredients of tequila blanco, agave syrup and lime, and is just the drop to pair with your mahi-mahi fish tikin-xic, chipotle Mexican rice with Portobello mushrooms, capsicum and pumpkin or chicken breast with the Mexicano Chef Pablo Galindo’s 32 ingredient mole, made just like his grandmother used to do—now that’s what we call the real deal.
Desert tequila anyone? Think of this as tequila’s member in the dessert wine club and can we tell you, it’s pretty epic after a year spent in old whiskey barrels to get it just right. We’re quietly confident that the whole “will put hairs on your chest” saying came from this baby and it’s well worth a try. Grab yourself a serve of their chocomole and peanut flan and you’ve officially feasted like a true Mexican.
