This Distillery Lets You Age Your Own Personal Whisky Cask

Gin may be having a moment right now, but whisky enthusiasts—this one's for you.

Thanks to Alchemy Distillers in Healesville, you now have the chance to make your very own cask of the good stuff. For those wondering, that’ll bring you 60 half-litre bottles whiskey. So you know, just a couple.

Basically, 2018 marks the start of Alchemy Distiller’s barrel-aging program, and they want to share that experience with the public. And what better way than by offering up one personal hundred barrels for sale to you good folk?

The ageing process takes roughly two-to-three years, and after your purchase, you’ll be invited down to share in all the key milestones of the whisky’s production—birth, awkward teen phase, graduation…It's just like having a kid. A made of 40% alcohol.

You'll be able to take in the glory of a thousand-litre cooper pot in action and watch your whisky is distilled. Witness your cask getting filled to the brim, see you name stencilled into the side of the barrel, check in to see how it’s maturing here and there, and finally lend a hand in bottling the good stuff up.

Leave with a grin on your face and bottles and bottles of whisky under your arms.

PRO TIP: For those not quite up to the task of 60 bottles (fair), some half-casks are also available. You'll have to be quick— there are only 100 barrels up for grabs.

Here's another regional Victorian gem: a retro 1970s glamping caravan in Gippsland. You're bloody welcome.
