Let’s break this bad boy down. You’ve got Huxtaburger’s signature buns wrapped around a lemongrass, ginger and chilli pork patty. On top of THAT you’ve got pickled carrot, nouc mam (a Viet fish sauce dressing), tossed green papaya, coriander and Vietnamese mint. Basically all your regular banh mi mates. Whack on some pate, spicy mayo and crispy shallots and you’ve got the makings of a serious burger. All that’s missing is the bakery-style margarine.
“We’ve taken the punchy, Vietnamese street flavours that people know and love from Hanoi Hannah and smashed them in a burger to bring Melbournians a deliciously juicy banh-mi hybrid,” says Huxtaburger co-owner and chef Daniel Wilson.
