MOULD is back, back again, and we couldn’t have a more cheesy grin at the news if we tried. Two words: Cheese Festival. *Cue reflexive retrieval of savoys and sav blanc. For those impervious to the brie-lliant spreads on offer at last year’s MOULD debut, you’re in for a treat.
This dairy fest is pioneered by REVEL (the crew behind Pinot Palooza & Game Of Rhones). They’ve also got Milk Made author and cheesemaker multi-talent Nick Haddow of Bruny Island Cheese Co by their side—to ensure MOULD is a pungent ode to the Aussie cheese trade.
You’ll be mashing the best artisan cheddars onto biccies, and learning the science behind pairing a chunk of camembert with a crisp chardonnay. There’s so many heroes of the industry set to deliver the goods, like Yarra Valley Dairy, Shaw River Buffalo Cheese, Grandvewe, Stone & Crow and heaps more. Drool.
Expect tastings, mid-mouthful-chats, demos, and masterclasses. Get ready to soak up the cheese goss like a sponge, and come with an empty stomach or leave with major regrets. The festival will also feature some of the big guns at Maker & Monger, Harper & Blohm and Burn City Smokers serving up cheesy dishes for you to pine over.
And because antipasto goods pair dreamily with a tall glass o’ wine, drinks will be available to purchase at a seriously decadent bar. This is our kind of forward-thinking. There’ll be local wines, whisky, beer, cider and sake at your fingertips available, with each bev matched to a particular cheese. It’s like horoscope compatibility but gastronomic (and legit).
Bonus? The price of admission includes a Plumm wine glass, glass of wine from the bar and unlimited tastings of allllll the Australian cheeses. That’s going straight in our basket.
