New opening alert, Listers: new Melbourne vegetarian restaurant, Transformer Fitzroy, opened its doors this week, celebrating all that’s good in the world of food and drink.
The latest restaurant to open on Fitzroy’s hidden Rose Street, Transformer Fitzroy brings together an all-star team from the Vegie Bar, Panama Dining Room, and Rice Queen in a venture that is firmly focused on flavour and eco credentials.
Sustainable architecture masterminds, Breathe, have designed the refurbishment of the building, which used to be an electrical transformer manufacturing premises. Recycled timber, brass and steel have been used to reimagine the industrial space for its second life. The new fit-out at Transformer includes living planter boxes that bring elements of the bar-restaurant’s garden area inside, and diners can eat surrounded by greenery.
But onto the food! The Transformer Fitzroy menu incorporates delicious seasonal vegetarian produce and, from what we’ve heard, every dish is a corker. Ricotta and rye dumplings with grilled apricots and wild berry compote, sprouted brown rice, barley and beetroot risotto, Asian mushroom ragù with sweet peas, marinated goat feta and crispy shallots…there’s not one dish we don’t want to rush out and try!
