Halcyon House is well known as Australia’s most secluded and idyllic beachside escape, and this winter they’re playing host to a hibernal rumpus through the local flavours for a very special long weekend from Friday 12 - Sunday 14 August.
Our guide on this mystery tour is none other than Sydney’s own marvellous Guillaume Brahimi, of the eponymous Guillaume Paddington restaurant, who will be carving out some time ahead of the opening of his next venture—a Sydney bistro coming in September—to spend some quality time at Halcyon with a lucky few punters.
The weekend’s itinerary casts off on Friday evening with poolside drinks and dinner at Paper Daisy restaurant in the deft hands of executive chef Ben Devlin. The following morning promises a master class with Brahimi as he dishes on favourite recipes from his book, Guillaume: Food for Family, ahead of Saturday night’s lavish dinner.
Guests are promised delectable plates in the style of Devlin’s fine dining spin on regional flavours, with fresh local seafood taking centre stage of Brahimi’s menu.
