Alcoholic Pho Is Now A Thing And You Can Get It In Melbourne

Stop it, Melbourne. You’re drunk. You need to lie down and reassess your life choices. We guess it was only a matter of time until someone thought to combine the city’s favourite on-trend cocktail (the Negroni) and its favourite soup-based-stimulant (pho), but this thing still took us by surprise. Yep, the guys at Uncle have gone and invented a Pho-groni.

What a freaking time to be alive.

We’re not sure if the Pho-groni is technically an alcoholic pho, or a very soup-y Negroni. Either way it’s bloody exciting. The creation was made to celebrate Negroni Week, and you can get it at Uncle’s Collins St store from 5 June.

How did they do it? Well Uncle’s Collins St Manager, Pete Siganto, took chef Dai Duong’s pho ingredients and did some Breaking Bad-style chemistry to create a pho-cocktail hybrid. The gin is first soaked in a spice mixture of ginger, toasted star anise and coriander seeds, then you add Campari, vermouth and a dash of water. To really get that slurpy-pho flavour, you have to let the mix mature for 3-4 months.

The Pho-groni will set you back $21.50 and, during Negroni Week, $1 from every sale will go towards the Lighthouse Foundation. Boozy pho for a good cause? We’re there.
