For the past year, we’ve all been watching with anticipation as Burleigh Pavilion, the $10 million 1200 square metre venue, slowly began to take shape at Burleigh Headland.
The Pavilion, born from the same crew who created epic spots like Sydney’s Manly Wharf Hotel and Bali’s Mrs Sippy, will be a total game changer here on the Coast with its premium beachfront location, chilled out vibes and trendy restaurant The Tropic.
After our site visit back in September, we’ve already been planning our summer days here, taking in the vista, throwing back cocktails and enjoying their seafood menu curated by hatted chef Guillaume Zika (a huge steal for the Coast).
Speaking of tipples we’ve been given a special sneak peek at their cocktail menu. Expect delicious sips like the Rosy Gin Kombucha made with gin, Campari, lemon juice, fresh ginger with lemon and ginger kombucha. And we love how they’re paying homage to the local scene with cocktails like the Burleigh Barrel (Bacardi Fuego spiced rum, Licor 43, strawberry, lime and vanilla sugar) and The Point (Spiced rum, Malibu, pineapple, ginger syrup and lime).
But the space, which has a capacity for 600 thirsty Gold Coasters, is in need of something very important ahead of its December opening—staff! The crew are currently recruiting for around 60 employees across the bar and restaurant including waiters, bartenders, baristas and food runners.
