A little off the beaten track lies Grandchester: a quaint little town about an hour outside of Brisbane. No, we hadn’t heard of it either, and no, it’s not the typical place you’d venture in search of fine dining, right?
Wrong! Sometimes the most unexpected of places offer up the biggest reward, and this curveball on our quest for hidden delicacies outside of our sheltered city life has come up roses. Because, what lies on the outskirts of this little town is pretty darn special.
Set within 12,000 acres of natural bushland, lies a beautifully renovated homestead on the hills just outside of Grandchester, the luxury retreat Spicers Hidden Vale and its one-hatted restaurant, Homage.
Dining at Homage is set within the gorgeous surrounds of the heritage-listed property, and, being a one-hatted restaurant, you generally expect a bit of pizzazz from the kitchen. At Homage, however, it’s the simplicity of the menu and freshness of the produce that makes it feel like a real treat.
Head chef Ash Martin showcases the finest local produce through creative (and very clever) flavour pairings and incredible presentation. Spicers Hidden Vale has been building relationships with the property’s surrounding farmers and produces for many years, and subsequently, many of the ingredients found on your plate are no more than a few kilometres from the source. Dishes like Flagstone Murray Cod, Pittsworth Quail, and Darling Down’s Pork Jowl, all come from neighbouring farmers (the menu reads like an area map!). Pretty impressive stuff.
Not only is Homage championing the age old saying ‘paddock to plate’, Spicers Hidden Vale also tends to 89 of its own garden beds, giving the kitchen pick of the freshest ingredients to pop on your plate. Add to that a seriously dangerous list of locally sourced and interstate wines, and you’ve got yourself the perfect combo for a memorable dining experience.
Whether you make a day of it, or you stay a night or two (seriously worth it), dining at Homage will not only provide you with a new found respect for the food that you eat, it’ll go down as one of the best meals you’ve ever eaten. Fact.
