Here’s Your Sneak Peek Inside Signature At Emporium

It’s taken a while, but Emporium Hotel on Southbank is almost ready to unveil the final jewel in its very delicious crown. The name is Signature, and make a mental note of this one, because you’re going be to hearing about it everywhere.

Signature is Emporium’s final showpiece restaurant. The big kahuna. Over the last eight months we’ve seen all sorts of things popping up inside the 5-star hotel: elegant Parisian patisseries (Belle Epoque), sky-high rooftop cocktail lounges (The Terrace) and even a dedicated Piano Bar next to the lobby. Now it’s time for a game-changing, spare-no-expense sort of  restaurant, and boy does Signature deliver.

The venue is due to open on 21 May, but we were allowed inside for a cheeky sneak peek. It looks stunning. Like impossibly glam. A Breakfast At Tiffany’s mix of salmon pink and high-baked burnt umber dining chairs, custom-made light installations, walls of polished brass and carpets so soft you want to take your shoes off (we didn’t).

So what can you actually eat here? Well the white onyx bar is serving a caviar and oyster menu (as you do), and there’s a private dining room, fenced in with a 150 year-old Parisian stained glass shop front. The menu is mostly ‘modern Australian’, which is another way of saying it’s whatever Executive Chef Chris Norman feels like serving you.

 “Signature will include locally sourced produce like Abrolhos Island Scallops, Eugowra Quail, Murray River Cod and Flinders Island Lamb,” Norman says. “In a nod to today’s demand for locally sourced and ever-changing food, the menu will be flexible and readily adaptable, allowing the restaurant to feature the freshest seasonal produce and deliver ongoing creativity to present a bespoke and vibrant culinary experience.”

Translation. Very very fancy. While we were there, the kitchen whipped up a blueberry cured ocean trout with crème fraiche and heirloom tomatoes (we washed that down with a cheeky rose martini—Gin Mare with grapefruit juice and a big lug of Ginger Liqueur).

For main, we tried the Darling Downs Wagyu Beef with pine mushrooms, swiss chard, capers, sauté potato. Needless to say—freaking delish. It was tough, but we did manage to squeeze in dessert as well: Norman’s delicate chestnut pudding with leatherwood honey and buttermilk. It was almost too pretty to eat, but we pushed through the pain.

We don’t want to give too much away. This is one schmancy restaurant you’re going to want to check out for yourself.

Signature is set to open its doors on 21 May. We can’t wait.
