Iconic Sydney deli-come-restaurant, Salt Meats Cheese have been teasing us for months regarding their Brisbane launch (of COURSE we wrote about it), but meanwhile down on the Gold Coast, Salt Meats Cheese have been delighting our coastal pals with their crazy-good menu for months now, and has just introduced the most mind-blowing, cheese-worshipping dish we’ve ever laid eyes on. Jealous? US?

Feast your eyes on the Flaming Cheese Wheel!       

Essentially it’s an impressive tradition plucked straight from southern Italy. Known as “cacio e pepe” which translates to “pasta and pepper”, this preparation method has long been shared when Italian families gather together, and now you can experience it IRL. Squeal!

Here’s the deal: warmed brandy is set alight and flambéed inside a massive semi-hollowed wheel of Parmigiano Reggiano. As the alcohol burns off, the melted Parmesan is scraped away, Caserecci pasta (cooked al dente in a four cheese sauce) is then added, more cheese is scraped away, then served into a bowl and straight to your table.

This is possibly the simplest yet most dramatic dish to grace the eastern shores, so clearly a little drive down the highway isn’t going to put us off. The first two Wednesday nights were booked solid, so if this sounds like your jam (if it doesn’t, are you even human?) pick up the phone and make a date with one of the best cheese dishes on the Gold Coast. Amen!
