There’s a new bar in Sydney.
…Bet you’ve heard that before, right?
Don’t worry, this one’s different, and I really mean it. Have you ever been to a bar drawing inspiration from Wes Anderson’s film set styling (think Grand Budapest, Darjeeling Ltd, Royal Tenenbaums) mixed with vintage hotel glamour? Didn’t think so. Of course, you wouldn’t expect anything else form the Applejack Hospitality guys (y’know, the ones behind The Butler, SoCal, The Botanist, and Bondi Hardware), would you? That’s right, there’s nothing by-the-book about this new Sydney bar, that is breathing new life onto Oxford Street, one cold drip negroni at a time.
After many a night in my youth drinking $5 vodkas at QBar, it was nice to return to the scene of said crimes and enjoy some quality drinks in a classier establishment.
Della Hyde, this new venue, is headed up by industry champs Joe Worthington & Lachy Sturrock, two Applejack veterans and best buddies that get a kick out of serving up epic cocktails night after night. In fact, when we got serious and asked Joe what excites him about coming into work every day, he told us, “Lachlan Sturrock's patchy beard and moustache. Every day I'm left wondering how a grown man can have such woeful facial hair”, #feelthelove.
Jokes aside, that’s what you’ll get here, top notch drinks and professional banter from the best in the biz. These guys take their drink offering very seriously, and Della Hyde will have a number of signature drinks on the menu, including Applejack’s famous salted caramel espresso martini, and a damn refreshing sparking strawberry daiquiri (Joe’s favourite). There is also a seasonal drinks offering that will change every two weeks. Think of white rum with fino sherry, burnt fig, vanilla, pear and lime, or an tiki-style punch with rum and falernum. There’s no wrong choice, just close your eyes and point… You’re bound to come up good. Of course, there is plenty of wine and beer to keep you occupied, if that’s your style.
Della Hyde is the kind of place you can head for a few after work drinks, a cocktail-fuelled date night, or somewhere to set up camp and make it into a night of drinking and dancing. The guys are cool, so there is no judgement of your moves here.
If you’re hungry, the food menu is short but substantial enough for a solid feed, with delicious morsels to enjoy while working your way through the ever-changing cocktail list. Think smoked meat sandwiches with pickle and watercress, cured ocean trout, spiced lamb pizza, and more.
I’m going to leave you with the knowledge that Della Hyde are open until 3am all week… So go do your worst, you crazy cat, you.
