Last week, Neil Perry and the Rockpool Group announced plans for a new burger establishment; this week, Sydney burger devotees can anticipate another lauded culinary fixture extending its operations. Jacob Smyth and Kenny Graham of Mary's have revealed an upcoming takeaway-only burger joint on Castlereagh Street in the heart of the CBD.
With a kitchen run by former Tetsuya's head chef, Luke Powell, Mary's Southern-style fried chicken and immaculate burgers have already garnered a serious following, with ubiquitous crowds flooding the dim-lit mezzanine after work hours.
While there are no plans for booze on the premises, thick shakes will be the order of the day, with house-made syrups being served up alongside fried chicken burgers and classic cheeseburgers, all freshly cooked on the production floor of the two-story venue.
Watch this space—the venue is set to open in September to October.
