The Merivale empire has opened its first Manly outpost, Papi Chulo—a waterfront smokehouse and grill that breaks all the rules.
The kitchen is headed up by talented Head Chefs, Patrick Friesen (Ms G's) and Christopher Hogarth (El Loco), while Dan Hong will oversee the restaurant as Executive Chef.
The menu has evolved out of a love affair with the Americas, with offerings such as smoked succulent meats, ceviche and empanadas, and perfectly charred seafood. Signature dishes include: empanadas filled with wild greens and raclette; the Papi Chulo burger with grain-fed beef, bacon and American cheese; and smoked pork ribs with Papi's BBQ sauce. You also can't go past the Wagyu brisket, or the wood-fired grilled jumbo king prawns—all delicious!
Here, fantastic ingredients and big flavours take the lead, and the drinks list is no exception with creations such as: Hong Island Ice Tea, iced lemon tea served long, bolstered with Bourbon and flavoured with peach; and the Cravado, an almost healthy frozen blend of Brazilian Cachaça coconut water, lychees, lime and mint.
