Digging for truffles has never been more Australian, with the classic pig truffle hunters being traded in for man’s best friend at the Diggin’ For Diamonds (Black Perigord truffles) events happening in July. Since we’re the kind of people who feel that most dishes would be improved with the addition of truffle (if budget allowed), we are pretty excited for this one.
Your day will start bright and early at Black Star Pastry in Rosebery before being whisked away to Biota Dining in Bowral for morning tea and a guided tour of their onsite kitchen garden. Then, it is on to the main event—Yelverton Truffles, aka the home of Australia’s largest truffle. Here you will hunt for the diamonds of the earth alongside expertly trained dogs, before enjoying a cooking demonstration by Black Pastry owner and patissier, Christopher Thé. If anyone knows how to bake truffles into our favourite pastries, it’s this guy.
Next comes the feasting portion of your day, where a truffle-heavy lunch will feature Black Perigord truffles at the heart of each dish. To start, they will be shaved onto hot soup, and then liberally mixed into freshly-baked quiche, before the truffle-inspired dessert comes along and steals the limelight. Each course will be paired with wine tastings from local Tertini Winery and the winemaker, Jonathon Holgate will be on hand to answer any and all of your burning questions.
