It’s official! The Coast’s most anticipated new addition is moments away from the big reveal. Having been developed under a tight veil of secrecy (and 19 floors up away from prying eyes, no less) Nineteen at The Star, a new restaurant and lounge bar atop the six-star The Darling hotel, will open to the public next weekend—Saturday 24 March.
Headed up by local culinary and nightlife legends, Simon Glofits and Billy Cross, we’ve been told to expect a fanciful 110-seat modern Australian restaurant overlooking The Darling hotel’s luxe infinity pool with wrap around views of the shimmering Gold Coast skyline.
Featuring a floor-to-ceiling cellar with a doozy of a wine list (think: 500+ bottles), the restaurant will adjoin a swish-as-hell lounge bar complete with a six-star fit out, staggering capacity for 500 guests and, we predict, a killer rotation of touring DJs. There will also be lavish private dining areas and another exclusive 80-person seat VIP bar that’s connected via an internal stairway.
With Simon plus long-term team member and incredibly talented Head Chef Kelvin Andrews leading the charge, the landmark produce-driven restaurant is set to push the Gold Coast foodie boundaries to all new levels of incredible. Bringing everything they’ve learned to the table, expect dishes like grilled Patagonian Toothfish, roast highland duck with foie gras, steamed coral trout with fresh ginger and, their signature dish, an amaze-balls rock lobster bolognese (stop it!).
Well positioned to top anything the Coast has ever witnessed in its lifetime, Nineteen at The Star, The Darling’s new rooftop restaurant and bar, will no doubt become an iconic must-visit destination on any savvy traveller’s itinerary—all the more reason our beloved Gold Coast is establishing itself as an absolute force to be reckoned with.
