The humble pumpkin has got to be one of the most versatile veggies on the planet—you can roast them, smash them, put them in desserts and drink them. You can even dry the seeds and eat them for a tasty snack or hollow them out to create jack-o-lanterns. If we had to choose one veggie to eat for the rest of our lives, it would have to be the pumpkin.
Autumn ‘tis the season for this vine-grown veggie to step into the spotlight and this week we tasted our favourite breakfast dish of the harvest. It’s a big call, but we’re making it.
Smoothie bowls have been done in every which way—from the OG acai to peanut butter, activated charcoal and those cray cray blue Mermaid varieties. Though Tugun’s super food cafe crusaders, Niche & Co., have absolutely hit the nail on the head with their new autumn special.
They’ve just released a spiced pumpkin smoothie bowl that is equal parts sweet as it is savoury. Blended through with turmeric and coconut flesh, then topped with coconut yoghurt, and all the Insta-worthy trimmings from pepitas and cacao to shredded coconut, Paleo granola and caramelised buckini, then topped with micro herbs and shredded chilli, to really keep your palate guessing.
It’s like a soul-satisfying pumpkin soup, yet served chilled and totally brekkie worthy. Scrap that, we loved it that much we could smash it for lunch or dinner too.
Niche & Co. is no stranger to outside-of-the-box creations, with their signature benedict with ‘vegan eggs’ (made with coconut and almond ‘whites’ and pumpkin and turmeric yolk-like centres) still a hot seller. With their lunchtime menu already pretty much exclusively vegan these days, Niche & Co. recently experimented with vegan dinners and will be returning soon with once-monthly vegan nights. We’ll be sure to let you know when they return!
