If we had to name a destination that most reminded us most of boho Byron Bay, it would be Seminyak, Bali. Which is probably why iconic farm-to-table restaurant Three Blue Ducks has chosen the island location for a seasonal pop-up, taking over the menu at Starfish Bloo, W Bali Seminyak’s iconic seafood restaurant for the summer months. Sounds like a damn good excuse to plan a trip to Bali to us *books flights*.
Swapping paddock-to-plate dining for sea-to-table feeds, the collaboration came about thanks to Three Blue Ducks’ residency at W Brisbane. Wanting to give their Balinese visitors a taste of the sustainable, ethical eats dished up by the Byron crew, W invited chef Darren Robertson to design a menu inspired both by his passion for travelling the world and Seminyak’s world class seafood.
So what’s on the menu? Well pack your stretchy pants as well as your bikini, because you’ll want to lick the plate clean after a three course meal of raw Indonesian swordfish with burnt cucumber, buttermilk and buckwheat, followed by rich lobster in XO butter and green, and flat iron with a cos, pickles and charred herb salsa to finish.
We have it on good authority that Darren himself scoured the island for the freshest seafood while planning the menu in conjunction with Starfish Bloo’s head chef Ashley Garvey. So whether you’re already planning a trip or you’re still deciding where to go these summer holidays, we strongly suggest setting your sights for Seminyak.
