21 Questions With Tom Davidson From Patch Cafe

What happens when you cross an ex-AFL footballer, with a foodie, a savvy entrepreneur, and a ridiculously chiselled jawbone? Tom Davidson is your answer. 

Driven by his desire to spread delicious and nutritious vibes throughout Melbourne, Tom co-founded Patch Cafe in Richmond in 2013. Ticking all the proverbial boxes in the world’s most competitive cafe landscape, Patch has truly solidified itself as a go-to Melbourne breakfasting/brunching/lunching institution. 

We took two minutes to chat with Tom while he whipped up the most epic sandwich ever for us (stay tuned for the recipe, after the jump!).

What time of the day do you get up?

I get up really early, like 6:30.

And do you need to set the alarm?

Yeah, definitely.

So, snooze? Or bang, straight up?

I'm snoozing a couple of times.

So, you lean over - what else is on the bedside table?

I've got a lot of books on the bedside table at the moment.

What's the first thing you do when you get up?

Have a shower.

Coffee or Tea?

Strong coffee.

Sugar?

No sugar.

How do you take your toast?

I take it well toasted and butter all the way to the corners.

What's the one thing that's always in the fridge?

Fresh produce.

Are you a sweet or savoury kind of guy?

Definitely savoury.

Favourite thing to make?

Dinner for friends.

Have you got a least favourite thing?

Yeah, making the bed in the morning.

Guilty pleasures, have you got any?

Yes, too many.

Three things you can't live without?

Coffee, red wine, and sleep.

Have you got a favourite gadget at the moment?

My new Samsung phone.

What about a favourite app?

Wunderlist.

What are you watching right now?

Suits.

What are you most excited about right now?

Just... being alive!

What's the best thing to do on a Sunday?

Have loads of people come into my cafe for brunch.

Least favourite thing to do on a Monday?

Get up at 6:30.

What's the best thing that's happened to you this year?

I met a great girl.

What about the best thing you've ever done, ever?

Oh, that's a tough question. Maybe just being born?

Is there a favourite thing in the kitchen?

Yeah, I'd definitely have to say my cast iron fry pan.

What about your favourite season throughout the year?

Spring.

Brunch, lunch, or snack?

I'm a brunch man.

Add another letter to the famous BLT.

E for egg.

Bagel or burrito?

Bagel.

The word 'detox' - yes or no?

No!

What would you say your signature drink is?

Lemongrass ginger tea.

If you had to have one last meal, ever, what would that be?

Mum's chicken lasagne.

Most spontaneous thing you've ever done?

I flew to California, five days out.

How come you did that?

To go to a Thanksgiving dinner.

What are you thankful for?

Being healthy and having a loving family.

And what did you just make?

I made a sandwich, inspired by California, with butter, turkey, cheese, cranberry, arugula, on sourdough.

Tom Davidson's Recipe For The Best Sandwich Ever

Ingredients

White sourdough

Camembert cheese

Arugula salad

Jalapenos

Turkey breast smoked

Cranberry sauce

Lurpak butter

Method

Butter the sliced sourdough with Lurpak Spreadable.

Spread cranberry sauce on one side of the bread.

Layer fillings in order:

  • Sliced Camembert
  • Turkey breast
  • Diced jalapenos
  • Arugula salad

Season with sea salt.

DEVOUR.
