Pasi's one-year, pop-up—in the former Café Pacifico site on Riley Street, Darlinghurst—is open to you lovely punters from Thursday the 8th of August.
Amidst the calm grey and white interiors, expect to feast on good value and creative, modern-European fair with Finnish influences in the form of rye, dill and licorice. Pasi certainly possesses the pedigree at the hotplates (think former Head Chef of Marque) to pull it off, his dishes being gloriously and technically assured, while forming the kind of bite you want to throw down your throat as fast as you can without choking.
There will be a few interesting menu twists, a white salad—of, yep you guessed it—white ingredients, from Murray Cod to lardo and white radish; a rye taco as a nod to the restaurant site's Mexican past; a pho tato—a potato meets pho incarnation that will have to be tasted to be believed; and a rye-roon for a macaroon rebirth of the humble bread and butter.
And did we mention the menu of five courses is a mere $85? I know! Finally a great dinner out that won't have you selling your soul at the Cross, post petit fours.
Get on the bat phone punters and book while you can. I have a (good) feeling this is going to be one of the hottest seats in town.
