When we hear about a new menu item from Butter it’s safe to assume it’ll be an instant classic. They killed it all winter with their fried chicken ramen and now Butter's executive chef Julian Cincotta is ready to hit it out of the park again with their Summer exclusive: the Katsu Sandwich.
Cincotta has embraced the traditional methods behind Japanese Katsu because, well, you don’t mess with a masterpiece. The fried chicken katsu sandwich is served with tonkatsu sauce and cabbage slaw and every element of the sandwich from the katsu patty and the panko breadcrumbs is made in-house. As for the key to the perfect Katsu? Cincotta says it’s the ratio of juicy chicken to crunchy panko coating.
And while Butter may be known for its chicken, the team here is looking out for veggos too. Cincotta has also created the mushroom katsu sandwich made using a whole field mushroom as a pattie.
Both sandwiches ring in at $13 and they’re available this summer at both the Surry Hills and Parramatta Butter locations.
