Don’t get us wrong, while avo on toast gives us life, sometimes you need to switch things up a bit on your regular café outings. For a start, there’s always that nagging feeling that yep, you totally could have just made that at home for one tenth of the price—not to mention your IG stories have definitely been looking a bit same-same lately.

If you’re on a quest for some brand-new brekkie content, we suggest you get yourself down to Haven Tailoring Coffee Joyously in Surry Hills. If you haven’t already guessed from the name, this isn't your average Sydney coffee shop. It’s been a fave with food bloggers ever since it opened; from their inventive (and photogenic) pan-Asian food menu, to some very special coffee drops (we’ll get to that later), you’ll find dishes you may not have tried before, but trust us, they’re done right.

Haven Tailoring Coffee Joyously's food is far from basic: there ain’t no avo toast here, and if you’re looking for eggs benny, well, their ‘It’s Not A Benedict’ pairs poached eggs with rosemary potato rosti, sweet potato skordalia, yoghurt, Tuscan cabbage and burnt sage butter (um, drool)—and is about as close as you’re going to get.

Other menu highlights include the likes of Japanese grilled eel with scrambled eggs, wakame seaweed, black rice cake, pickled onion and miso cream cheese; the rich house-smoked salmon pasta with a prawn and squid ink sauce, prawn oil, pecorino cheese, and green pangrattato, served with raw egg yolk for stirring through; and Lao-Men: ramen noodles, edamame, daikon, deep fried lotus root, fermented green tea, black sesame sauce, sizzling beef fillet and a poached egg. Phew!

But what really caught our eye (and is one of their most popular dishes) is the signature pork belly ‘kimcheese’ burger, that comes with kimchi, cheddar, a sesame frittata, apple slices, spinach and radish. It’s an actual taste sensation, and we’d put serious money on it being like no other burger you’ve ever tried before.

Prefer a sweet brekkie? Get ready to ‘gram their signature egg waffles, that come dramatically presented in flavours like Hokkaido, with matcha sauce, red bean, coconut cream and matcha ice cream, or tiramisu: espresso choc sauce, mascarpone, strawberry jelly and strawberries with a chocolate waffle.

Of course, with a menu like that, they aren’t just going to serve any old coffee. Haven takes pride in redefining the coffee experience by tailoring each brew right down to element level (now, the name makes sense!). They’re passionate about coffee but not prescriptive—their philosophy is ‘the best coffee is the coffee you love’, and we couldn’t agree more. The process is completely interactive: your coffee order is totally customisable to your tatste; more or less aroma, acidity, sweetness, body, and/or aftertaste (think a flat white with extra sweetness and body, or a nutty long black with less acidity but extra aroma). And there's no right or wrong answer.

Creativity and quality is what they’re all about: beans are freshly roasted daily, while their Slayer steam espresso machine preserves their sweetness. Order a mocha with 73% Couverture dark choc, have your affogato with matcha ice cream, or experience their must-try Single Origin experience from the Brew Bar, in your choice of nutty, chocolaty, or fruity notes.

Don’t just be another statistic in a stream of avo on toast posts, Haven Tailoring Coffee Joyously’s menu is a total must-try. Just remember to bring a mate to hand model.
