The Best Perth Pop Up Bars To Drink At This Summer

Whether it’s a brand newbie popping up or a golden oldie making a comeback, we’re here for all of Perth’s best pop up bars to drink at this summer.

Embargo Bar


An all time favourite and veteran in the pop-up bar scene, Embargo Bar is still a winner. This season they’re spending summer on the Swan River at The Point (the old Ku De Ta site) and you’ll want to check it out.

They’ve got the Front Bar, which looks over the water, treating you to a 360-degree view of the Swan River and access to the licensed jetty. Then there’s the Slipway; the perfect place to spend a lazy afternoon in the fresh breeze on their comfy lounge chairs. And of course the Embargo Deck, which mimics the set-up of previous years and the real reason we fell in love with Embargo in the first place; a huge turfed outdoor beer garden and bar area, festoon lighting, and live music.

Kartel Bar

Elizabeth Quay

Kartel Bar is the new pop-up you never knew Perth needed, but now won’t be able to live without. From the guys behind The Camfield and Embargo, Perth’s only Mexican pop-up bar is Elizabeth Quay’s new hot spot this summer.

The Mexican inspiration goes beyond the festive and colourful aesthetics at Kartel, and has inspired the drinks list too. Think a Suave Agave cocktail with tequila, agave and lime with a black salt rim; or the Bontanga Libre with reposado tequila with Mexican colo, vanilla and lime. For the beer lovers they’ll be pouring Tecate, Dos Equis, Pacifico and Negra Modela just for you.

The food also has a Mexican twist with a spicy diablo cheeseburger, cheese rice croquetas and nachos up for grabs. Make sure you check it out before it’s gone again on Boxing Day.

Ice Cream Factory


Back for another stint after a huge first season, Ice Cream Factory is upping its game yet again this year with 15 nights of wild memories.

Sitting at the same spot on Roe Street in Northbridge, you may not recognise the new site design. Think 12 unique zones, seven dance floors and 12 bars.

Running until New Years Day, the full season music line-up includes the big names of The Presets, Broods, Hermitude, DJ Tigerlily and Art Vs Science.

The Dock


Fremantle’s pop-up wharf bar is also back this December. The Dock is the ideal pop-up bar if you’re after chill vibes and a few sundowner beverages. Located at Freo’s recently refurbished B-Shed and overlooking the iconic Fremantle port, The Dock will be open until 31 December so is perfect for any festive catch ups on your list.

Expect delicious bites from Locale Kitchen and weekly guest spots from some of your favourites like Baolicious and Bantastic Mi. The best bit about The Dock is that you can bring your furry four legged mates too.

The Magic Squirrel


We’ve stumbled across a pop-up bar that’s a bit out of the ordinary. The Magic Squirrel is the new immersive and theatrical cocktail bar that’s popping up in the old Fremantle Prison from 7 February for three weeks only. Think Alice in Wonderland meets some seriously creative cocktail makers.

Follow The Magic Squirrel through crazy light projections, giant art installations and a magical forest wonderland that will have you feeling transported. The staff are all WAAPA graduates and the cocktail menu is curated by one of London’s top bars Evans & Peel, so you can trust The Magic Squirrel is in good hands.

The Oasis


This summer pop-up bar is the newest CBD open-air destination, sitting in a leafy green summer garden among a concrete jungle on Mounts Bay Road and right opposite the Perth Convention and Entertainment Centre.

This Hamptons-style setting will boast multiple bars including two custom designed containers, an elevated sky lounge, boutique food stalls and an array of local and national live music acts.

The Oasis is doing something exciting on most nights of the week; cheap eats every Wednesday, acoustics every Thursday and $10 cocktail Fridays. You’ve got until March to try this one before it’s gone.
